Best Moroccan Roasted Chicken Recipe

The traditional Moroccan Roasted Chicken is usually slowly cooked and grilled over charcoal.  The addition of Harissa, which is optional to the spice mix gives it a warm, interesting spicy flavor.  Serve with potatoes or rice.

Moroccan Roasted Spicy Chicken

Ingredients (serves 4-6)

  • 3-4 pounds chicken (pieces or whole)
  • 2 garlic clove minced
  • 2 teaspoon paprika
  • 1 teaspoon cumin
  • 1 teaspoon salt and pepper to taste
  • 1 bunch fresh parsley & cilantro thinly chopped
  • 1/2 lemon juice
  • 3 tablespoon butter
  • 1/4 teaspoon Harissa (optional)


  1. Preheat the oven to 425 F
  2. In a bowl, mix the garlic, paprika, cumin, salt, pepper,  herbs, harissa together with butter to make a paste.  Rub the spice mixture into the chicken.  Add lemon juice over the chicken and let it chill for 30 minutes to 1 hour
  3. Place the chicken in a lightly greased roasting pan.  Cook covered with an aluminum foil for 35 minutes. Then roast uncovered, at 425° for another 20, or until cooked
