Falafel Recipe, Best Appetizer Ever!

Falafel is a north african and mediterranean dish for vegetarian patties made using chickpeas or fava beans.  It makes a great appetizer or salad when served with garlicky tahini or yogurt sauce, or can make a great sandwich with pita bread.

Ingredients: (served 4)

  • 1 cup dried chickpeas or 20 oz canned chickpeas
  • 1 large onion, coarsely chopped
  • 3-4 garlic cloves, coarsely chopped
  • 4 tablespoons mixed parsley & cilantro, coarsely chopped
  • 2 teaspoon lemon juice
  • 1 teaspoon baking powder
  • 1 teaspoon cumin
  • salt & pepper
  • 1/2 teaspoon dried hot red pepper or chili pepper (optional)
  • oil if deep frying or couple tablespoons of olive oil oil if baking sheet

  1. Let the chickpeas soak overnight in a bowl filled with water or use drained canned chickpeas without the need to soak
  2. In a pan, boil the chickpeas for 20-30 minutes, or until soft
  3. In a food processor,  place the chickpeas and process until it becomes a paste
  4. Add the onion, garlic, parsley, baking powder, lemon juice and spices and process until the ingredients are well mixed
  5. Shape the paste into small walnuts size balls, flatten them slightly and toss in flour if they are going to be fried
  6. Fry at 375 degrees or bake the Falafel for 20 minutes at 350 or until golden
  7. Serve warm

If served as a sandwich:  In a pita bread, add tahini sauce, salad, chopped onions and tomatoes, falafel and garnish with chopped parsley.
