If you are a health freak, this is the perfect dish for you to indulge in! Referred to as sesku, couscous is a fine wheat pasta usually rolled by hand. It is steamed over a meat or vegetable stew, and is served in a special way – the meat is topped with couscous, while veggies are on the sides and sauce is presented separately. Moroccan mint tea is offered at every home as a sign of courtesy to guests. Gunpowder tea is sprinkled with mint leaves and poured into a pot. The pouring is done from a height for the “frothy crown” on top.

The calamari is soaked in Moroccan spices or what is called Chermoula and burnt to perfection over hot coals. It can be served with a dip or just by squeezing a slice of fresh lemon on top.
Elegantly called Moroccan eggplant caviar, it is a smoked aubergine dip, spiced with garlic, paprika, cumin and a little chili powder.
Harira soup is used to break the fast of Ramadan at sunset. It contains tomatoes, lentils, chickpeas and lamb, and is deliciously flavored with lemon juice and chopped coriander.
Orange and Cinnamon Salad
It is a simple, yet yummy recipe with a couple of oranges, an apple, and a tablespoon of cinnamon. Just peel the oranges by removing the rind, slice them, and arrange with the apple slices. Sprinkle the cinnamon generously.
This sweet concoction is prepared in numerous ways over the Mediterranean but the Moroccan pudding is more delectable than other versions. The rice is first boiled in water and then simmered in milk, which enhances its taste.
